Whats fairly easy to make that I can have with my Mexican themed party?
I have a taco bar, margaritas, guacamole, nachos, and fried ice cream.. I don't feel like I have a side dish.

Any ideas?

Refried beans, and Mexican rice. Or what I like to do is make a black bean and rice dish. It's not just a side, it can also be stuffed into tacos or enchiladas for people who aren't crazy about meat.

fried rice add salsa or taco sauce to the mix while boiling thew rice. Refried Beans take the canned beans add garlic chicken base cumin and black pepper also a couple of tablespoons of A-1 sauce mix well and micrwave hot. for an appetizers make some cheese quesadillas. heat a square griddle on medium put a little oil on it 1 TB put a 8 " tortilla on it spread lightly with picante on 1 side sprinkle cheese on the picante. fold over the tortilla over the cheese to make a half moon. grill lightly on both sides to a light brown. remove from heat cut into wedges with a pizza cutter and serve. you shoul get 6 to 8 wedges out of each tortilla serve with guac & sour cream.

Throw some pintos in a crock pot with a piece of salt pork and seasonings (include a half a jalapeno or so). These are called charro beans.

I think that GP is speaking of pozole. It is a menudo spiced caldo (soup) with pork and white hominy instead of tripe. It is good but not as simple as you might want. It could also be made in the crock pot, though.

Beans & Rice.
Beans should be refried. Borracho bean are much better, but you can get decent canned refried beans @ your local grocer.
Rice should be cooked with Saffron & Paprika.
Fyi, what you got going on is more Cal-Mex than Mexican, but it sounds very festive!

Buy some refried beans, spanish rice, and salad with lots of cucumbers and tomatoes.

I think some fried beans with chorizo, cheese and some chilli would be awesome...you can also eat the beans with tortilla chips....and you could probably also make some rice....
