Would you share your favorite cookie or truffle recipe?

My daughter and I are baking cookies today and we are grateful for all the recipes given to us.

I already made them all and delivered them. I think I am going to make sugar cookie cut-outs with my girls tonight, though.

I made:
Candy Cane blossoms
Chocolate Toffee Crunchies
Choco-mint snaps
Peanut butter cup cookies
Peanut butter balls
dipped pretzels

I would love to share the recipes if you are interested!

My favorite this year: Choco-mint snaps. They taste just like Girl Scout's Thin Mints (but with a better texture)!

Choco-Mint Snaps
Makes about 72

4 (1-ounce) squares unsweetened chocolate
4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 1/4 cups vegetable shortening
2 cups sugar
2 large eggs
1/3 cup light corn syrup
2 1/2 tablespoons water
2 teaspoons peppermint extract
1 teaspoon vanilla extract
Additional sugar for rolling

Melt chocolate squares in the top of a double boiler over simmering water; set aside to cool.
Preheat oven to 350 F. In a small bowl whisk together the flour, baking soda and salt; set aside. In a large mixing bowl, using an electric mixer at medium speed, cream the shortening and 2 cups sugar until light and fluffy. Add eggs and blend well. Add reserved chocolate, corn syrup, water, and extracts and blend well. Stir in flour mixture until just blended. Shape dough into 1-inch balls; roll in additional sugar and place about 2-inches apart onto greased baking sheets. Bake for 9 to 11 minutes. Cool a few minutes on baking sheet and transfer to wire racks to cool completely.

Christmas cooking and baking is on my agenda for the whole week.

I'm finishing up Tamales today. Our cookie tray will be:
rum balls, oatmeal raisin cookies, cranberry crinkles, cream cheese thumbprints, and molasses cookies. I'd like to make some Mexican Wedding Cookies but I'm worried about time.

Here's the best Rum ball recipe I've ever used. The ones with cocoa just don't measure up.

Rum Balls:
1 cup semi-sweet cocolate chips
1/2 cup rum (darker is better)
1/4 cup light corn syrup
3 cups vanilla wafer crumbs (about 82 cookies)
1 cup finely chopped pecans
1/2 cup powdered sugar
More powdered sugar to coat

Melt the chocolate chips in a double boiler.
Remove from the heat and stir in the corn syrup then the rum.
In a seperate bowl combine the dry ingredients.
Add the chocolate mixture in thirds making sure everything is well combined.
Shape into 1" balls and roll in powdered sugar.
Store in an airtight container for about a week to develop the flavor. You can substitute burbon or Kahlua for the rum.

A friend makes non alcoholic ones by using 1/2 cup of super strong coffee and a teaspon of rum extract. Me, I want rum balls.

Peanut Butter Blossoms

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1/4 cup butter or margarine, softened
1/4 cup shortening
1 egg
1 1/2 cups Gold Medal all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
Granulated sugar
3 dozen Hershey's Kisses milk chocolates, unwrapped

1. Heat oven to 375ºF. Stir together 1/2 cup granulated sugar, the brown sugar, peanut butter, butter, shortening and egg. Stir in flour, baking soda and baking powder.
2. Shape dough into 1-inch balls; roll in granulated sugar. Place about 2 inches apart on ungreased cookie sheet.
3. Bake 8 to 10 minutes or until edges are light brown. Immediately press 1 milk chocolate candy in center of each cookie; cool on wire rack.

I already finished all my baking and shipped it out. Every year I use those mini-loaf pans and make the following recipes:

Applesauce cake
Banana Bread
Lemon Poppy-Seed Cake
Chocolate cake with chocolate icing
Chocolate chip cake
Pumpkin Bread
Peanut Butter Fudge
Rice Crispie Treats

Everyone loves them and I take "orders" the end of November what what each family member would like. I mail them to my son in Iraq as well and they keep nicely.

(I make cookies for my son in every normal box I send him each month.)

Haven't started yet, but my sister bought everything that we need to make sugar cookies. We make them every year. We use cookie cutters, sprinkles, frosting, food coloring, etc. to make them special. It's a fun tradition.
