My family always made it with ground beef and a white sauce and served it on toast triangles.
Basic white sauce:
* 2 tablespoons butter
* 2 tablespoons flour
* 1 cup milk
* salt
* white or black pepper
Melt butter in a saucepan over low heat; stir in flour and any desired seasonings. Stir and cook for about 2 minutes. Do not brown. Gradually stir in milk and continue cooking over low heat, stirring constantly, until sauce begins to thicken.
Toss in the browned ground beef.

I make it all the time. Brown 1 to 1&1/2 pound of ground chuck in a large frying pan.Take off the stove and drain off most of the fat. Add a packet of Lipton dried soup mix-beefy onion, onion or onion/mushroom. Add about 1/4 cup of Bisquik. Stir powdered mixes to coat the browned hamburg. Return the pan to the stove and turn on the heat. Add about 2 cups of milk and stir while the whole pan comes up to heat and starts bubbling. If too thick, add more milk. Serve on toast for authentic SOS, but tastes good over mashed or baked potatoes.

My husband had this often in the Army for breakfast.
Brown one pound pan sausage. Drain grease. Lightly sprinkle the sausage with about 2 T. flour. Mix well over low heat but don't allow flour to burn. Slowly add one cup milk and stir constantly until thickened. Add freshly ground black pepper. Serve over buttermilk biscuits.
