INGREDIENTS:
1 tablespoon vegetable oil
1 1/2 pounds lean ground beef
1/2 cup chopped onion
1 envelope (1 3/4 ounces) chili seasoning mix
1/2 cup water
1 can (14.5 ounces) diced tomatoes, undrained
1 can (15 ounces) kidney beans, undrained
1 tablespoon brown sugar

PREPARATION:

Heat oil . Cook ground beef and onions over medium heat until it is no longer pink. Stir in chili seasoning mix, then add remaining ingredients. Reduce heat, cover, and simmer for 10 minutes

I'm assuming you live in small quarters - the reason for the toaster oven. My hubby and I lived out of our 25 foot 5th-wheel trailer for 18 months while we traveled all over the U.S. and lower Canadian Provinces. I did all my cooking and baking in my toaster oven when we were hooked up to electricity. So, with that knowledge, you can make just about anything in that toaster oven with some tweaking. For instance, you can bake chicken in it - but only if you cut it into pieces (drum stick, thigh, breast, etc.)- obviously - no room for a whole chicken. You can make cakes, cookies, pies, casseroles, roast a small 3 lb roast, roast a pork tenderloin, etc. You just need to have the smaller cooking pans. For your cake and cookie recipes, just cut the ingredients in half and you will make smaller portions. For instance, the regular Toll House cookie recipe - cut in half - makes 19 cookies or much fewer large ones :)

Here's my recipe for chili that I used on the trip. Very simple and tastes great. When I was young, a neighbor made it and served it over rice - that really added a nice flavor to it.

CHILI (for 2)

1 medium can kidney beans
1 small can kidney beans
1 medium can tomato sauce
1 small can mushrooms - drained (optional)
1/4 - 1/2 pkg Chili Seasoning (like Chil-o Mix) - depending on how hot you like it
8-16 oz ground beef - depending on how meaty you like it

Saute the beef until no longer pink. Drain off the grease. Place in a pot on the stove. Add the rest of the ingredients, stir well, and heat until it comes to a boil. Turn the heat down, simmer for 30 minutes. Serve. Better the second day.

Here's an oldey but goody - and Easy... "London Broil" - 4 servings 1 lb. high-quality beef flank steak 2 medium onions.; thinly sliced 1/4 teaspoon salt 1 tablespoon margarine or butter 2 tablespoons vegetable oil 1 teaspoon lemon juice 1/2 teaspoon salt 1/4 teaspoon pepper 2 cloves garlic; crushed Cut both sides of beef steak into diamond pattern 1/8" deep. Cook and stir onions and 1/4 teaspoon salt in margarine until onions are tender; keep warm. Mix remaining ingredients; brush half of the mixture on beef. Set oven control to broil and/or 550*. Broil beef with top 2-3" from heat until brown, about 5 minutes. Turn beef; brush with remaining oil mixture and broil 5 minutes longer. Cut beef across grain at slanted angle into thin slices; serve with onions. (This would be good served with a rice side dish.)

in a toaser oven? small pizza, cassarole, there are lots.

I started with a very small oven and got better as I got older. Just make smaller recipes of whatever you want to make. I use recipes for the basic ingredients and ad some of my own. I had lots of mess ups in the beginning.

You can make mini pizzas in a toaster oven Just use English muffins, top with shredded mozzarella and parmesan cheeses, sliced pepperoni and pizza sauce and bake

i've seen on tv. that young british chef jamie oliver, he did a great chilli
it was like this.he took pepperoni, sauffron, and other herbs, he put olive oil in a pot, he put the herbs inside in the oil, with fresh tomatoes peeled, later he added some coconat milk , and i don't remember exactely the rest but i remember that i said hmmmm yummy, you can look online for his recipies if you like
