How does it work if you are getting paid hourly at a salon and then you have enough clients to rent?

Once you rent then you should have access to all your clients phone numbers and address, make your own hours and make your own appointments right? So when it comes time to rent does the salon just hand that info over to you, or do you still have to be sneaky about it, take the clients and move to a new salon??? How does all this stuff work?
