There is the original quote:
there are several possibilities here. On the one hand, one may point to the benefits conferred by a diet based upon vegetables, grain and roughage generally; on the other, one may point to the harms that await the voracious meat-eater.

Can I do this with a quote? Remove some words and add my own?

What you have here is exactly right (well, almost). It's OK to omit words from a quotation if you replace them with an ellipsis--three dots with spaces between them, and a fourth dot (the period) if the ellipsis is at the end of the sentence. And its OK to insert words of your own into a quotation if you put them in square brackets, as you've done. So change that dash to an ellipsis, and you're home!

If you're going to paraphrase, you have to remove some of the other words.

The use of "voracious" and in the same order as the quote makes it too close to the original to be a real paraphrase. Same thing with "conferred." Same with "on the one hand."

It would be safer to use:

If can be seen that there are both benefits to a vegetarian diet and negatives to a diet with an overly-large amount of meat consumption.

If you paaraphrase the quote you can't say: whoever said, and continue with the paraphrased quote. Instead you need to word it as: whoever talked about and continue with your paraphrased version.
