I've seen this tattoo on a lot of fighters(MMA, Muay Thai kickboxers), they usually have it on their arm. Anyone have an idea of the significance? I've seen it on at least three fighters, including Rob McCullough.

Does it really show in tattoos?
Odd. This symbol is by itself representative of the subtraction principle in roman counting. "I" being the smallest numeral, "V" being the next (five). Put together, five minus one is supposed to signify the four. Jupiter, who is regarded as the Roman god, also can be spelled IVPITER. So it is either that these warriors put on this symbol to say they are fighting for god and Rome, or for the mathematics symbol.

The bottom answer is correct. Also, they may have "IV" tattooed because they're the "IV" (fourth) generation of that name. I too have the roman numeral "IV" on my shoulder blade signifying that my suffix at the end of my name is "IV" and that there were 3 others before me
