If you are an American citizen, you are responsible for paying taxes but UN will not deduct the taxes for you

If you are a foreign national working in the UN, no you don't pay taxes. You pay taxes in your home country, though many countries exempt those employed in international organizations from paying taxes. In the Philippines for example, you simply attach the certification from the UN that you are employed by the UN and you don't pay taxes.

This is the same for foreign employees of other international organizations such as World Bank or IMF

If you are a US citizen or resident, yes.

If you are a foreign ambassador, consular staff, or UN employee, you do not pay US taxes.
