Trimmings are the things that traditionally go with a turkey dinner, like bread dressing, cranberrt sauce, sweet potato souffle, pumpkin pie, green beans, etc.

"Trimmings" in this case means "decoration." (-; But it's decoration you can eat. So, trimmings would mean the roast potatoes and carrots that go around the turkey, and maybe the cranberry sauce and gravy. possibly the white little "hats" that go on the ends of the chicken bones. Many people include all the side dishes.

Note: You can also "trim the tree" (decorate the Christmas tree).

"Turkey and all the trimmings" means all the side dishes that go with a traditional turkey dinner, such as stuffing (dressing), mashed potatoes, gravy, green bean casserole and whatever side dishes your family usually has, sweet potato/marshmallow, squash, creamed onions, peas, etc.

"Turkey and all the trimmings" Usually with an "s" on it.

That is usually the stuffing (bread, herbs, just plain yummy) that is cooked inside.
Sometimes this also extends to what usually goes with the "traditional" turkey dinner..
Gravy
Cranberry sauce
Mashed Potatos
etc..
At the very least gravy and stuffing.
It's yummy! :)

At my house, the trimmings would be cornbread dressing, giblet gravy, sweet potatoes and mashed potatoes for those who don't like sweet potatoes, cheese grits, green beans, deviled eggs, cranberry sauce, olives, and green onions.
Oh yes, and hot rolls.
