I'm doing something simple like a baked potato and salad.
Bake the potato in the oven, not a micro wave because that is a boiled potato.
Cut them in half longways and scoop out the filling leaving the skins.
Add grated cheese, bacon, celery, cream and butter to the scooped out spuds.Season well. Mix together well and fill skins with the mix. Add more cheese over the top and bake again for approximately 25 mins gas mark 5 or until golden brown on top.

I'm making caramlised onion and goats cheese tats with a salad.
2 large onions sliced into wedges
1 tsp light brown sugar
4 sheets filo pastry
50g goats cheese
pepper to taste
8 sprigs fresh thyme, to garnish
Preheat oven to 190c gas mark 5
spray a non stick fry pan and ad the onions and cook for 5 mins over a low het stirring often. ad the sugar and cook for a further 5 mins until the onion start to turn a rich brown. cool.
cut the pile of filo pasty into 8 (4in) squares, spraying each square with low fat spray, layer them into 8 muffin tins, and place on a baking sheet.
Bake for 5-6 mins until the pastry is almost cooked, spoon the onions into the tarts and share the goats cheese between them. Top with thyme sprigs and bake for 4-5 mins more. Season with pepper, then serve. Add some yellow or red strips of pepper to the onions if liked. or add some cut up tomato to the tarts before cooking.

If you don't want to order out, and you want healthy, do a fabulous stir-fry!! Your favorite meat or shell fish and fresh veggies, broccoli, carrots, cabbage, onions, bell pepper etc. Tossed in the pan with garlic and ginger, a little sesame oil and soy sauce! Don't forget the red pepper flake to kick it up a little. (all to taste)
Mix cream cheese, garlic powder (to taste), crab meat and minced chives in a bowl. Lay out some won ton wraps and place a small amount of the mix in the middle. Fold the sides together, dab with water or egg whites, press with a fork to seal and fry in a skillet with peanut oil (canola if you want) until slightly brown. (they will continue to brown for a few seconds when you remove them)
Make some rice, and you have a great meal that others can have fun helping with. Not to mention, completely different from your Christmas Day Meal (usually)!!

My husband always makes baked ziti for Christmas Eve because it doesn't require a lot of prep work or sides. We make a salad and have garlic bread with it. Easy to make, easy to clean up - not a lot of dishes or pans - and we're ready to kick back and enjoy the rest of the evening with our family.

SCALLOP WRAPPED WITH BACON
Wrap each scallop with 1/2 slice of partially cooked bacon. (If scallops are too big for bite-size pieces, cut them in half.) Broil in oven approximately 5 to 6 minutes, until done. (Dot with butter and sprinkle lightly with salt and pepper before broiling.)
BUTTERNUT SQUASH AND APPLE SOUP
16 oz. butternut squash, peeled, seeded, cut up
3 med. green apples, peeled, cored, chopped coarsely
2 (10 1/2 oz.) cans chicken broth (or make your own)
1 med. onion, chopped
3 slices white bread, torn in pieces
Salt, pepper, rosemary, marjoram
Combine all ingredients. Bring to a boil, then reduce heat and simmer uncovered for about 45 minutes. Cool, then put in blender until smooth. When ready to serve, heat again. Add a swirl of half and half after you transfer the soup to the serving bowls. Garnish with some chopped parsley.
