I love breakfast burritos (taquitos/whatever) - fry up some ground sausage, drain, push to the side of the pan and add scrambled up eggs and cheese and mix together - throw in a tortilla

well, first mix the eggs in a cup w/some salt, pepper and some herbs if u like, such as a little bit of basil,thymes...add to the cup small cubes of onion, sweet pepper and garlic,u have the option of tomatoes,.....then,pour the mixture into a pan and fry using some oil/unsalted butter-my preference-let it fry as a circle, then, flip it to the other side as well to make sure it's done, using flat kitchen tools to hold it properly and not disturb the shape.another suggestion is to wait for it to become a little bit solid, then place a couple of chedar slices in the middle of the circle, and fold each side covering the cheese so it'll look like a sandwich.u can add potatoes by the way if u like to...it will taste really good as well.u can do the same recipes through mixing all the ingredients i mentioned instead of the circle shape...:)

Mix in mashed potatos(leftover from the night before) a little flour, chopped green onion, kosher salt, fresh ground pepper, shredded cheddar cheese, and thyme. Shape into patties and fry until golden on the outside and cooked thru. Serve with bacon or sausage. Some folks like to put syrup over it, but I like em just the way they are!

Use a package of Simply Shreds or pre-shredded fresh hash brown potatoes. Prepare as per package, browning one side. Add chopped sweet onion or scallions, chopped bell pepper, celery and carrot and stir in. Add clove of minced garlic. Add just about any meat you might have on hand (I really like ham in this, sometimes sage, smoked or italian sausage). Add chopped tomatoes and mushrooms (drain these if canned). Cover, stirring occasionally to heat through. Smooth out, pour in 2-3 scrambled eggs and heat until eggs set. Salt and fresh-ground pepper to taste. Cover with a bit of cheese - parmesan, shredded cheddar, etc. If you've got one and the inclination to use it, finish off with a quick minute or so under the broiler until cheese is bubbly and golden.

I like Tony Cachere's seasoning, and a dash of Tabasco besides. Italian seasoning is good, with parmesan, mozzarella or a smokey provolone. Use beef and taco or fajita seasoning is good with Velveeta crumbs or Cheddar. Just match your seasonings to your meat and flavor choice, and you've made yourself a delicious "frittata".

make a birds nest they are really good.
ingredients-1 or 2 eggs, 2 strips of pre-cooked bacon, and one piece of bread.
set the stove to a temp you would normally use to cook an egg
1.first you crack and egg or two in the pan.
2.then you tap the yolk so it spreads out a little, about half the size of of a piece of bread.
3.you let it cook for about 30 seconds don't scramble the egg.
4.grab a piece of bread and poke a hole in the center of it about the size of a dime. lay that piece of bread on the egg.
5. push on the piece of bread so the egg and bread fuse together so to speak. flip it to make sure its gonna stay together.
6. then get 2 pieces of pre-cooked bacon out and lay them on the eggs. flip it back over to where the bacon is touching the pan and let it cook till the bacon is done.
7. then get a plate and eat. they are fast and easy to make.

If you ever have some left-over steak, cut it up and add it to a skillet with peppers and onions and saute all this with a little olive oil. When the veggetables are soft and the steak is heated through, add your eggs and scramble. Serve with some hashbrowns.

Tarragon, sour cream, hot sauce.

Oh yeah, CHICKEN! The eggs came from a chicken, it only makes sense that the two would go good together.
