None.

While carrots do contain vitamins that keep your eyes healthy they will not improve the vision of healthy eyes.

My understanding is that urban legend stems back to WWII when Britain managed to develop a radar unit that would fit inside a fighter. This improved the performance of the British night-fighters. The carrot thing was a piece of misinformation to hide the real reason for the British successes due to radar.

It depends on why your vision is poor. For example, the carotenoids in carrots absolutely can improve your night vision (because it improves light sensitivity) and general eye health. In fact, a deficiency of Vitamin A CAUSES night-blindness and is recognized as specific nutritional deficiency disease. But if your eye is misshapen, as in the case of astigmatism, it's unlikely that any nutritional support efforts are going to make changes there. If that was even possible, it would take years to notice the benefits because the cells of your eyes have about a 7 year lifecycle.
