What's the difference between sweetened condensed milk and evaporated milk? Can they be used interchangeably?

Oh no, no, no!

Both versions have had about 60 percent of their water removed by evaporation. There the similarity ends.

Before evaporation, lots and lots of sugar is added to the future condensed milk, so that by the time it’s in the can, it is about 65 percent sugar as opposed to the 11 or 12 percent of naturally occurring sugar in the boiled-down evaporated milk.

Using Powdered Milk to Approximate Evaporated Milk

Is there a powdered milk mixture equivalent to evaporated milk?
Yeah, but no one will say, "Oh boy! This is yummy!" (Come to think of it, no one ever says that about evaporated milk either, do they? Never mind....)

Since 60 percent of the water has been removed from milk to make evaporated milk, add only 40 percent as much water to the powdered milk as the instructions call for (or a bit less than half, if the math is too challenging. A couple percent here or there aren't going to matter.)

These are three different kinds of milk products, and usually can't be used interchangeably.

Condensed milk and evaporated milk are both milk products with about 60% less water content in them. They are also usually very shelf stable, meaning they can last for a very long time without refrigeration. Condensed milk is usually different from evaporated milk in that Condensed milk usually has sugar added to it.

Evaporated milk is usually processed more to prevent bacterial growth. Sugar content in condensed milk inhibits the growth of bacteria.

Powdered milk is lowfat milk that is drum dried, freeze dried, or spray dried to turn milk into powder. The dehydrated milk solids make up the powder. This can usually be used interchangeably with regular milk. One cup of regular milk is the same as one cup of water and 1/3 cup of powdered milk. Powdered milk is also preferred in recipes where you would want the milk flavor, but adding milk would make the recipe too thin.

They are all different.

Nothing can be subbed for condensed milk, unless you make your own.

Powdered milk can be subbed for evaporated milk if you mix it twice as strong as called for (OR use half the water called for).

Evap milk is regular milk that has had half of it's water removed.
Powdered milk has had all the fat and water removed.
Condensed milk has been concentrated and has sugar added. Lots of sugar.
