like in the pictures where everything is b;ack and white except for like the red in the rose... lol please help.. i'm trying to do it for a christmas present

ok first you want to click on the magnetic lasso button. after you do that trace the object that you want to be colored and after its completely surrounded, right click and select cut. then it makes 2 layers. grab the background layer and go to Enhance, Adjust Color, Remove color and it will turn everything else black and white

Use the polygonal lasso tool and highlight the area that you want to be colored. Copy and past it in another layer. Then click on the layer with the WHOLE picture and go to Image->adjustments->Hue/saturation. Move the saturation bar all the way down to -100. It should then be black and white. You may need to make a few contrast adjustments. If you want, you can then flatten the image.

EIDT:
Make sure the lasso tool is feathered. You can adjust this on the top of your window. Set it to about 5. This will eliminate any sharp lines and make it appear more natural.

Ok it's really simple. And it sound like you are in a hurry to do this for Christmas.
This is the cheating way.
Simple & Quick, not professional though

open photo
go to image- duplicate image
now you have 2 exact copies
turn one of them into black & white
move the b&w copy on top of the color photo
zoom in close as u can
use the eraser
erase the b&w in the areas where you want the color to come through.
