I am looking for some recipes that will go with ham for a holiday dinner. Any good vegetable recipes out there? Thanks!

Scalloped potatoes
Green bean casserole
Broccoli casserole

The broccoli bake I make isn't on the web anywhere but here it is:
Enough fresh broccoli to fill a large casserole dish
Steam 8-10 minutes
Combine cream of chicken soup with 1/2 can water and pour over top
Cover with shredded cheddar cheese
Combine Bisquick and butter into crumbles and sprinkle desired amount over the top
Cook at 400 degrees for 20 minutes

It's really good. Don't let it get too soupy though.

For the scalloped potatoes, I usually substitute cream for the milk and add sauteed diced onion for more flavor. It's fattening but it's really good and Christmas only comes once a year anyway!

Ham and broccoli ring 1 cup broccoli (chopped) 1 1/2 cups ham (diced) 3/4 cup chedder cheese (shredded) 2 pakages crossiant rolls Lay the crossiant rolls on a sprayed cookie sheet in the shape of a circle. So the points are facing the edges of the cookie sheet. Make a sturdy base with the widest part of the dough, make sure there are no gaps. Mix broccoli, ham and cheese in a medium bowl. Spoon mixture on the crossiant about one inch across the dough ring and about one inch high, or until all the mix is used. Fold the points of the dough over the mix and press into the inside of the ring. It is best if there are some openings on the top of the ring. Bake according to the instructions on the crossiant tube. Let cool about 10 minutes. You can use spinach if you don't want to use broccoli. This is a good way to get kids who are picky eaters to eat veggies.

Sweet Potato Casserole Recipe
Ingredients:

1 can (40 ounces) sweet potatoes, drained and cut into 1-inch pieces
2 tablespoons butter, melted
1/2 cup firmly packed brown sugar, divided
1 teaspoon pumpkin pie spice
1 tablespoon maple syrup
2 cups miniature marshmallows (optional topping)


Directions:

1. Preheat oven to 350°F. Place the sweet potato pieces into a lightly buttered 2 quart baking dish.

2. Mix the remaining ingredients and pour evenly over the sweet potatoes.

3. Bake 40 minutes, stirring halfway through cooking time.

4. If you are using the miniature marshmallows as topping, remove the casserole from oven and stir gently to coat potatoes in syrup; then top with the marshmallows Bake, uncovered, additional 7 to 10 minutes or until the marshmallows are golden brown.

Some of my favorites:

Broccoli Casserole
1/4c. chopped onion
6Tbls. butter divided
2Tbls. flour
1/2c. water
18oz. jar cheese whiz
2 packages frozen chopped broccoli thawed and drained
1/2c. cracker crumbs

Saute onion in 4Tbls. butter until clear. Stir in flour, and butter and cook over low heat stirring until mixture thickens and comes to a boil. Blend in cheese. Combine sauce and broccoli. Add egg, mix gently until blended. Turn into 1 1/2 quart casserole dish. Cover with cracker crumbs, dot with remaining butter. Bake at 325 degrees for 45 minutes to 1 hour. Cool well before serving.

Rice
1c. medium size egg noodle.
1/2 stick butter
1/2 stick butter
2 1/2 - 3 c. chicken broth
Crush egg noodles and the brown in butter. Add rice stirring constantly. Add chicken broth, bring to a boil, cover and simmer 14 minutes.

Broccoli Salad

2 heads broccoli
1lb bacon fried crisp
1c. white raisins
2 bunches of green onions
1c. sugar
1c. mayo
1c. mayo
Break broccoli into bite size pieces and put into a large bowl. Crumble in bacon, add raisins and thinly sliced green onions. In seperate bowl mix together sugar, mayo and vinegar. Stir until all lumps are removed. Pour over salad. Refrigerate a couple hours before serving.

Mashed Potatoes (not just any mashed potatoes either :o)

6-8 Idaho potatoes
3 cloves garlic
3/4 c. sour cream
3 Tbls butter
Milk - enough to make the potatoes creamy
salt

Things I like to add occasionally - bacon (fried crispy, crumbled), vidalia onions (chopped small), green onions or chives, parmesan, cheddar, or whatever sounds good.

I boil the potatoes with salt and the garlic until they are fork tender and ready to be mashed. Then I add everything else and beat them with my mixer.

Salads pretty much go with everything. I make one in particular with homemade raspberry viniagrette, green apples, dried cranberries, mixed baby greens, and whatever else you like on salad. (I soak the apples in water with lemon juice and cut them right before serving so they don't turn brown and look pretty!)

I'm a big fan of fresh green beans too and like them with butter, toasted almond slivers, red pepper, and onion.

Sweet potatoes are another good one. I serve mine like they do at the steakhouses with butter, sugar and cinnamon. Sometimes I'll slice them open add all the goodies and then place marshamllows on top and put them under the broiler for a minute or two. Sweet potato casserole is yummy as well with pecans and cinnamon.

Potato salad is a good pick. You can make it ahead and not be rushed. I linked our favorite potato salad. It has Italian dressing in there so has a unique and very great flavor.

Hard to believe what some people eat.

Instead, side the ham with: Roasted potatoes with olive oil, salt and pepper and rosemary; Steamed Brussel Sprouts with caraway, garlic in butter;
roasted fennel;
mashed turnips with half and half, sugar and butter;
baked acorn squash with brown sugar;
fresh, steamed asparagus with vinaigrette;
fresh, steamed string beans almondine.
Eat well, don't eat canned vegetables, the lazy cooks serve that crap.
