It depends on the holiday. The Fourth of July is easy, because it was for the signing of the Declaration of Independence. Some holidays, like Thanksgiving, are assigned arbitrarily. Some are associated with the birthdays of the person, like Lincoln's and Washington's birthday. Some are associated with ancient festivals, like Yule.

There are many interesting books out there on the origins of holidays, I read one when I was a kid and I lived it. There are lots of fascinating details you can learn about how holidays got started.
