I miscalculated how much I needed. If I use it within a week will it last ? Or would freezing be better?

It should be fine over a week, as long as it's tightly sealed from air/moisture. You can also freeze it, if you'd rather.

definite you could freeze the dough. i could make your dough and element it so as that each physique you're able to do is take out a 0.5-dozen products, bake then and you have got 6 cookies. The dough will shop for a pair of months.
