Answer...
( 1 Cor 15:3-7)....
 For I handed on to YOU, among the first things, that which I also received, that Christ died for our sins according to the Scriptures; 4 and that he was buried, yes, that he has been raised up the third day according to the Scriptures; 5 and that he appeared to Ce′phas, then to the twelve. 6 After that he appeared to upward of five hundred brothers at one time, the most of whom remain to the present, but some have fallen asleep [in death]. 7 After that he appeared to James, then to all the apostles.

Well, I think Paul was the last person to actually see Jesus on the road to Damascus, but John had a vision of Him in Revelation.

The apostle John, on the island of Patmos.

Rev 1:9 I, even your brother John, and co-sharer in the affliction, and in the kingdom and patience of Jesus Christ, came to be in the island being called Patmos because of the Word of God, and because of the witness of Jesus Christ.
Rev 1:10 I came to be in the Spirit on the Lord's day, and I heard behind me a great voice, as of a trumpet,
Rev 1:11 saying, I am the Alpha and the Omega, the First and the Last; also, What you see, write in a scroll, and send to the seven assemblies of Asia: to Ephesus, and to Smyrna, and to Pergamos, and to Thyatira, and to Sardis, and to Philadelphia, and to Laodicea.
Rev 1:12 And I turned to see the voice which spoke with me.
Rev 1:13 And having turned, I saw seven golden lampstands, and in the midst of the seven lampstands One like the Son of Man, having been clothed to the feet, and having been girded with a golden girdle at the breasts.
Rev 1:14 And the hairs of His head were white as white wool, as snow, and His eyes as a flame of fire;
Rev 1:15 and His feet like burnished brass having been fired in a furnace; and His voice as a sound of many waters;
Rev 1:16 and having in His right hand seven stars; and a sharp, two-edged sword proceeding out of His mouth, and His face shining as the sun in its power.
Rev 1:17 And when I saw Him, I fell at His feet, as dead. And He put His right hand on me, saying to me, Do not fear. I am the First and the Last,
Rev 1:18 and the Living One; and I became dead; and, behold, I am living forever and ever. Amen. And I have the keys to hell, and of death.

If you mean after His resurrection, and before He ascended to Heaven, it was a group. See Acts 1;11. If you mean the latest scriptural mention of anyone seeing the Messiah YAHOSHUA, it would probably be John (the Revelator)

Jesus was teaching the disciples when he was suddenly taken into away. The disciples were starring up into the clouds, and an angel told them that Jesus would return in the same manner he left, but in the meantime, they should go to Jerusalem as he told them to do.

Two guys dressed in white sitting in the park and saying "we just saw him going that a way."

His followers had just gotten there, late for the meeting, and he was already gone. "We just saw him going that a way."
They were pointing straight up.

Jesus' followers craned their necks to see if they could catch the last glimpses of Jesus.

He hadn't really gone up though; he had huriedly left town with his uncle.

But a legend was born.
