Keep it simple, so you are spending time with him, not running into the kitchen every three minutes.
How about a simple steak (thick porterhouse, 5 minutes a side under the broiler), steam (any green veggie he'll actually eat) and a starch - pasta, or rice, or fresh bread? Do all the prep before he comes over, so all you need to do is turn on the stove and oven, and deal with the steak.

Stuffed shells, salad with homemade raspberry vinagrette, bruschetta.
Roast chicken with onions, lemons and fresh herbs (rosemary and thyme), stuffed inside. Pour a can of beer in the bottom and let it roast. I usually put it on a rack or on a bed of tin foil to keep it out of the liquid. I cover until the last 20 minutes and then uncover to let the skin brown and crisp. You could serve with salad, mashed potatoes and another veggie like green beans or steamed broccoli.
Homemade fajitas with homemade fresh salsa is a fun idea too.
My hubby loves any kind of roast as long as it's done right. Make sure you get a good piece of meat, I usually ask the butcher. (they'll get one from the back if the ones in the counter don't look that great) I roast mine with lots of garlic, potatoes, carrots, onions, colored peppers and celery (for flavor). I brown each side before putting it into the oven, it adds flavor and helps seal in the juice.

Beer Beef Stew (for the cold night!)
INGREDIENTS
2 tablespoons vegetable oil
3 1/2 pounds beef stew meat, cut into 1 1/2 inch pieces
1 cup all-purpose flour
2 large potatoes, chopped
1 cup chopped carrots
3/4 cup chopped celery
3/4 cup chopped onion
3 cloves garlic, chopped
1 tablespoon dried basil
1 tablespoon dried thyme
1 cup chili sauce
1 cup beer
1/4 cup brown sugar
DIRECTIONS
Heat the oil in a skillet over medium heat. Place the beef stew meat and flour in a large resealable plastic bag, and shake to coat. Transfer coated meat to the skillet, and cook about 1 minute, until browned.
Mix the potatoes, carrots, celery, onion, and garlic in a slow cooker. Place browned beef over the vegetables, and season with basil and thyme.
In a bowl, mix the chili sauce, beer, and brown sugar, and pour over meat in the slow cooker.
Cover slow cooker, and cook 8 hours on Low or 2 hours on High.
