i 'make' rolls at work. we use frozen dough, and I would like to add some interesting toppings before baking, any suggestions? also, any flat bread recipes? thanks.

POGECA OR CROATIAN FLAT BREAD

6 to 7 c. Robin Hood flour
2 c. extra warm water
1/3 c. lard
2 tsp. salt
2 pkgs. yeast, dry

Measure half the flour in large bowl. Add dry yeast and salt to this flour.
Melt lard in the water. Mix the water into the flour mixture and beat until smooth. Add more flour and knead until dough is rather stiff. Make sure you knead it about 10 minutes.

Grease and flour a large pan. (I use a round pizza pan.) Place dough on the pan and flatten it to round flat shape. Grease top and sides of bread. Prick dough with fork all over. Let stand until about double in warm, draft free place about 45 minutes or less.

Brush dough with diluted egg yolk. Place in hot preheated oven. Bake about 1 hour. Break into pieces and serve with soup or cut into slices. Very good toasted.

CHEESE TOPPED HERB BREAD

2 tbsp. mayonnaise or Miracle Whip
2 tbsp. chopped green onion tops
1 c. grated cheddar cheese
1/4 c. Parmesan cheese
Garlic powder to taste

Slice loaf of French bread in half, lightly toast. Spread mix on bread, return to oven.

You could also incorporate these add-ins:
Add Ins - Nuts, fruits, even candies can be added into your bread doughs. Just be aware that these add-ins will slow the rising time.

If you roll out a loaf of bread dough into a rectangle, you can spread some pizza sauce,cheese, chopped pepperoni's onto it and then roll up. You can do the same thing with a mixture of brown sugar melted butter, cinnamon for a sweet bread. For an aromatic bread, you can wipe the rolled out dough with melted butter then sprinkle some crushed rosemary and thyme onto it. Smells really nice. I always knock the herbs off before eating it because I don't like that texture.

Walmart makes breads topped with cheddar cheese, sometimes flavored with jalapeno. I like breads topped with sunflower seeds. And here's a recipe I found for cheddar-topped flat bread:
