I cant buy Tabasco Chipotle Sauce where I live in Australia and I love it,,,would anyone have a recipe for it using ingredients I can readily buy here in Oz ?

Yeah,,the supermarkets in their wisdom dont sell it any more,only Tabasco or Tabasco and garlic,,,there is an American Import place in Victoria I can order it from but at $20 a small bottle I think I'd rather try and make it myself. !

Ingredients 1/2 cup plain yogurt 1/2 cup mayonnaise 2 teaspoons pureed chipotle peppers in adobo sauce Directions In a small bowl, mix together the yogurt, mayonnaise, and chipotle peppers until smooth. Chill until serving.

This recipe tastes just like tobasco:

24 small hot red peppers, seeded and sliced lengthwise
2 medium onions, chopped
2 cloves garlic, halved
1 tablespoon dry mustard
2 teaspoons salt
2 whole garlic cloves
1 1/2 cups white vinegar


Combine hot peppers, onions and garlic in the bowl of a food processor or blender and puree.
Add dry mustard, salt, cloves and vinegar and combine.
Transfer to a small nonaluminum saucepan and simmer over medium low heat 3 to 4 minutes.

You'll need to refrigerate this sauce.

Jee, if you can't get Tabasco I doubt you can get Chipotle peppers. That is smoked jalapeno peppers. I bet you can get Tabasco online, just cost an awful lot.
If you can fined canned Chipotles though just puree add a little salt and some plain white vinegar. That will be very close.

Chop half an onion and 1 large clove of garlic; heat oil and cook onion and garlic until softened; transfer to a blender, add a cup of water and 1 chipotle pepper with some of the adobo it comes with; blend until smooth; heat some oil and fry the mixture until heated through, season with salt and pepper.
That's the basic chipotle sauce; some people add chopped tomato to the onion and garlic; others also add chile ancho, pasilla, or guajillo (cleaned and soaked in hot water until softened), or other spices, like clove.

Chipotle sauce
yeilds roughly 5 cups

16 garlic cloves minced
Fresh cilantro chopped
8t balsaminc vinegar
8t dijon mustard
.3 cup honey
4t toasted frsh ground cumin
2 cans chipotles in adobo sauce
4c salad oil
1.3C Fresh lime juice
Salt and pepper to taste

Add all ingredients except the oil and lime juice to your blender or robo coup and mix Slowly add your oil in while mixing in a thin steady stream to emulsify. Finish with your lime juice.

Enjoy Its great for steak

CHIPOTLE SAUCE

2 tbsp. olive oil
1/4 each onion, chopped
1/2 stalk celery, chopped
1/2 each carrot, chopped
3 each red bell pepper, stem removed, deseeded, chopped
1 clove garlic, chopped
1/2 c. chicken stock
1/2 c. heavy whipping cream
2 each chipotle chilies, canned
2 tbsp. unsalted butter
1 each lemon, juice of
Salt and ground black pepper, to taste

Heat olive oil in a large sauce pan. Add onion, celery, carrot, red peppers and garlic. Cook until vegetables begin to soften, stirring frequently. Add the chicken stock and let reduce in volume by half. Add the cream and reduce in volume by half. Place in a blender the red pepper mixture, chipotle chilies, lemon juice and butter. Puree until completely liquidized, strain. Season to taste with salt and pepper.
