how do you get gravy for a prime rib roast? There seems to be just fat in the pan when done roasting.

1/2 c. red wine
1/2 c. beef stock
Carefully pour off all the fat from the pan. Reserve pan juices and brown bits that have been scraped from the bottom of the pan. Pour this, the wine and stock into a small saucepan and simmer gently. Transfer gravy to bowl and carve the roast. Serve immediately

Try this: coat the rib with kitchen bouquette or something similar. Then rub with a beef base powder. Add a small amount of water . When the roast is finished cooking pour the liquid into a tall narrow vessel like a juice pitcher the fat will now be on top in a smaller area and is easier to remove. There are also separaters available any almost any supermarket.

Traditionally, a prime rib roast is not served with gravy. It is served with Au Jus (a strong and fortified broth) or Horseradish sauce. To make a gravy or (au jus) from the drippings in the roasting pan; remove roast, pour off all but 3 TB of drippings, add 1/2 cup red wine to the pan and, stirring up all the bits of browned flavor on the bottom of the pan, let the wine boil for a minute or two, then add 1/2 cup beef broth or consomme. Taste for salt, add a good grind or two of black peppercorns. Let the au jus simmer for 2 or 3 minutes. Serve on the side. To make a decent Horseradish sauce, combine 3 TB of jarred grated horseradish with 1 cup of sour cream or whipped cream. Taste for salt. Serve on the side. Good cooking.

use a strainer to catch the fat...always can add a little water too
