I have recently taken a liking to spinach. Does anybody have recipes for spinach?

This summer I tried sauteed spinach at a restaurant and discovered that it's really good. I always thought that cooked spinach was icky and slimy like spinach in a can but if you only cook it for a couple of minutes it's delicious. I created the following recipe that's even better than what I had at the restaurant.

Sauteed Spinach
1 teaspoon olive oil
2 teaspoons butter
½ medium red bell pepper, seeded and cut into thin strips
8 med mushrooms, sliced
1 bag fresh rinsed baby spinach
1/2 teaspoon Mrs Dash, Garlic and Herb

In large skillet, heat olive oil and butter over medium heat. Add bell peppers, cook, stirring frequently, for about 2 minutes.
Add sliced mushrooms and cook, stirring frequently, for another 2 minutes.
Add rinsed (undried) spinach to the skillet, sprinkle with Mrs Dash and cook, stirring occasionally, for 2-3 minutes. Move immediately into a serving dish and serve.

Once you’ve stirred in the spinach, turning this gently with a pancake turner works well. The spinach should just barely begin to cook. You want to keep it from sitting on the bottom of the pan for very long.

I wash the spinach well, but don't dry it. Get a big skillet with a lid hot, with some olive oil in it. Add some garlic and the spinach, turn the spinach over. Cover and let steam for a minute.

Or, steam the spinach as above, using a tablespoon or so of water instead of the oil. When cooked, drain and put in a couple of tablespoons of cream cheese. Let it soften, then mix it up.

Here is how I do spinach, swiss chard and other greens.
Fry up some bacon till crisp, drain on paper towels.
Put the greens on the hot bacon grease just long enough to wilt. Put them in a serving bowl. Crumble the bacon over the greens. Sprinkle with a bit of vinegar. Add a bit of paprika for a little color.

I add bacon and a bit of balsamic vinegar...yum. My favorite is the Indian dish of creamed spinach and cheese...it's called
Palak Paneer:

2 bunches fresh spinach trimmed and cut into small pieces. (This does not taste the same with frozen spinach)
3 tablespoons yogurt
3 tablespoons cooking oil
1/2 pound paneer cut into medium cubes
1 teaspoon cumin seed
1 onion finely chopped
2 cloves garlic finely chopped (optional)
1 teaspoon cumin-coriander powder
2 tomatoes diced
1 cup heavy cream
Salt to taste
1 teaspoon garam masala

METHOD

Add 3-4 tablespoon water with the spinach in a bowl and microwave for 1-2 minutes, until the spinach is wilted.

Puree into a fine paste with the yogurt and set aside.

In a little oil, fry the paneer cubes till lightly browned. (This is optional).

Heat oil in a pot and heat the cumin seeds and sizzle. Add the onion and garlicsaute till transparent. Add the cumin-coriander powder with the tomatoes and cook till soft and well blended. Add the spinach mixture and cook till the color changes to a dull green. Add the paneer cubes and cook for 5 minutes, stir in the heavy cream with salt and cook for 2-3 minutes more.

Remove from the heat and sprinkle with garam masala.

boil some beef like you would beef stew you can even put in crockpot and just add two boxes frozen spinach then salt and pepper and fry some chopped garlic on the side add it to the stew and then when ready before eating squirt some lemon and eat it with white rice.
so good

check this out, little bit of butter into the fire ad chopped onion, let them soft then ad some chopped mushrooms let them turn into brown, then ad the spinach. Garlic,Salt & Pepper. And that could be a side for a steak or a grilled chicken breast. enojoy it!

I LIKE TO MAKE A GREEK DISH OF SPINCH AND RICE, 1 ONION, 1 POUND OF SPINACH SALT, PEPPER,SAUTE IN OLIVE OIL, ADD CHOPPED DILL SAUTE A LITTLE MORE,ADD RICE 1 CUP AND A 1/2 OF RICE SAUTE,,ADD THE JUICE OF 2 LEMONS BRING TO A BOIL AND WHEN WATER EVAPORATES LOWER FLAMES COVER AND COOK 20 MINUTES MORE ,DO NOT UN COVER TILL THEN,NAMASTE
