I am looking for a ideas what to do with chicken fillets for dinner.

HONEY MUSTARD CHICKEN BREASTS

4 chicken breast filets
1/4 c. honey
2 tbsp. brown mustard, Dijon style

Smash the chicken breast filets by pounding them with a heavy object (such as an iron skillet). Mix the honey and mustard and spread the mixture on the chicken. Broil the chicken for 15 to 20 minutes.

Chicken Nuggets aka Baked Fried Chicken

for "Baked Fried Chicken" use fillets whole
for "Chicken Nuggets" cut into desired size

Coat Chicken pieces with Flour seasoned with Salt & Pepper; dip into Egg Wash (one egg; equal amount of milk) or Buttermilk; then into crushed Cornflakes or Bran Flakes seasoned with Pepper, Garlic, and favorite dried herb (or seasoning mix); place on cooling rack over cookie sheet and bake until done in 350 degree oven (time varies by size of pieces).

I have successfully made Chicken Nuggets for kids then addded more seasonings and made the Baked Fried Chicken for adults--just be prepared to remove Nuggets from oven when done as they will be seriously overcooked if left in until Baked Fried Chicken is done.

You could bake some French Fries, Tator Tots, or quartered New Potatoes at the same time (whatever you have). Add either some veggies and dip or a salad, and you have a meal.

Chicken Fried Chicken

Pound fillets until thin. Salt meat. Dredge in flour, egg, again in flour, egg, and flour a third time. Place in preheated (med/high) 1/2 inch of oil in frying pan and let cook until batter is golden brown. Flip and repeat on other side. Cover with creme gravy or sausage creme gravy (store bought pkgs are excellent and easy).

Hi. I work in a restaurant and these are a hit with the kids and adults alike. Here is the recepie:

1. Cut the chicken fillets in almost chicken nugget size pieces.

2. Put the chicken in flour, then egg yolks, and the roll the chicken in some italien style breadcrumbs.

3. Melt butter in a pan and pan fry the chicken until brown.

1 tbsp. ketchup\
mix and pour over chicken, put in a covered casserole and bake at 350 for 1 hr.
