Yes it can.

I've got Final Cut Studio 2 & Shake installed on both my iMac (2.16Ghz 2Gb RAM) and my Mac Book Pro so the latest iMac will run it no problems at all.

It's well worth considering upgrading the RAM to beyond the 1Gb that's installed as standard. it'll work ok but it'll be way faster if you have more. Apple are pretty expensive for their memory upgrades so it's worth considering installing the RAM yourself, it's really simple and can be done in less than 10 minutes.
