Chicken Tacos
My kids and all the neighbor kids used to love this. Put everything out on the table and let them choose whatever they like.
diced cooked chicken
Crisp taco shells and/or soft tortillas (everybody seems to like flour best)
small bowls containing:
warm refried beans
sliced lettuce
chopped tomatoes
sliced olives
choppd green onions
sliced avocado
chopped bell peppers
sliced jalapeno peppers (I like them)
sliced cilantro
grated cheeses (I did white and yellow, mild and sharp to give them a choice)
mild salsa
bottled hot sauce
sour cream
It seems like a lot, but you don't really need much of any one thing - just a handful. The kids will always eat flour tortillas and chicken, even if they don't eat anything else. Everything can be saved into containers and find it's way into sandwiches or a casserole the next day.
Chicken and Rice Casserole
Sautee some onion and garlic in a casserole dish. In the same pot, add uncooked long grain rice with chicken stock instead of water. Cook rice. Add cooked chicken about 10 minutes before rice is done.
Add veggies as desired before cooking rice: celery, carrots, chopped potatos, tomatoes, etc. (this will break down and become very soft).
Can also add veggies that you want crisp tender at the same time you add the chicken: slivered carrots, celery, bell peppers, green onion or other . Add fresh snow peas, mushrooms, or chopped tomatoes if desired just before taking off the stove

Chicken Enchiladas
Cook chicken, chill, and shred. Add a dash of chili powder, garlic powder, and cumin and mix together.
Heat 12 red corn tortillas 1 min, on high in the microwave.
Cook chicken and shred.
Roll chicken and a bit of shredded cheddar into tortillas and stack in a baking pan.
Pour 1 can of mild-med enchilada sauce over top (Found in Mexican foods aisle of most grocery stores).
Add 1/2 cup of shredded cheddar over top.
Bake covered for 10 minutes at 350 degrees. Uncover and bake 5 more minutes to brown cheese a bit.
Serve with a bit of sour creme and salsa...yum.

Chicken Kebabs.
4 Chicken Breasts.
2T Soy Sauce.
2T Dry White Wine.
1 Clove Garlic Crushed.
1t Fresh Grated Ginger.
Chop chicken into 2cm (¾”) cubes. Mix in a bowl with soy, wine garlic and ginger and marinade for 1-2 hours.
Prepare vegetables for kebabs. Mushrooms, tomatoes, peppers (bell), onions, pineapple, baby corn.
Thread onto skewers and cook on the grill.

MEXICAN CHICKEN
1 frying chicken
10 3/4 ounces cream of chicken soup
10 3/4 ounces cream of mushroom soup
6 1/2 ounces chicken broth
10 1/2 ounces tomatoes with green chilis, (Ro-Tel)
1 medium onion, chopped
12 ounces corn chips, (Doritos)
1 1/2 cups shredded cheddar cheese
Boil chicken and remove from bones. Heat soups, broth, and tomatoes in saucepan. Place the following in baking dish in layers: chicken, onion, corn chips, and cheese. Pour sauce over layers.
Bake at 350 F. for 30 minutes.

My kids liked chicken nuggets and a different shaped pasta than we usually use with spaghetti sauce over it.
I saw on Ina Garten once that she made chicken strips on a stick.

either fried chicken or shake n bake is a kids favorite here..or put chicken in baking dish..cover with cream of chicken soup and top it with stove top dressing, cover and bake at .350 for 45 to 60 mins.
