MIDDLE EASTERN TABOULI SALAD

1 (6 oz.) box bulgar wheat or couscous
1/3 c. olive oil (or other oil)
1 clove finely crushed garlic
2 finely chopped tomatoes
1 1/4 c. cold water
1/4 c. lemon juice
1 tbsp. parsley, chopped
1 sm. onion, finely chopped
Salt/pepper to taste

Mix bulgar wheat and other ingredients in bowl. Let stand 1 hour to absorb water in the refrigerator. Serve on a bed of lettuce.

MIDDLE EASTERN GRILLED CHICKEN

4 chicken breast halves, skinned & boned
1/4 c. lemon juice
2 tbsp. olive oil or other cooking oil
2 tbsp. spicy mustard
1/2 tsp. oregano leaves
1/4 tsp. salt, optional
4 med. onions, cut in halves
1 green pepper, cut into 1" squares

Cut chicken into 1 inch pieces. Combine lemon juice, oil, mustard, oregano and salt; add chicken, stirring until well coated. Cover and refrigerate at least 2 hours.
Arrange on skewers, alternating with onions and green pepper. Grill over hot coals or broil 10-15 minutes, turning occasionally and brushing with marinade.

hummus chicks peas, garlic, olive oil and tahini. (thats can chick peas) salt and pepper to taste tahini can be found is the important section on your gorcery store.
2cans chick peas
3or4 cloves of garlic
1T sp od tahini
enough olive oil to make it a spooth paste in your food processor
