Saying Amen to a blessing or a prayer demonstrates a statement of affirmation that the blessing is true and hope that the prayer will be answered.
Edit: No 'amen' is not evoking an Egyptian Deity. It is one original Hebrew word that has made it now in several languages. The word Amen is related to the word "Emunah" that means faith and/or belief.

For what this is worth, in Old English, the Lord's Prayer ends with the word "Sothlice," which means "truly." Otherwise, I've always understood what most of the answerers do--that "amen" means "so be it." When someone says "Amen" at the end of someone else's prayer or in response to a statement, it means he strongly agrees or seconds the comment.

In Hebrew, Amen comes from "El Melech Neaman" meaning The G-d (singular) King that is faithful.

Amen is the name of the one true god, at least the first monotheistic god, from Egypt. What does it mean to you?

Amen means 'the end'. After saying grace, it means the end, I'm finished, the prayer is over.

It's the name of an Egyptian diety. I wonder if the Hebrews had to hide their faith while in Egypt and called a local god's name at the end of prayers to deceive anyone listening about who they were praying to.

Derived from 'Amon'
An Egyptian ram-headed god, often shown as a bearded man wearing a cap with two tall plumes. The era of this Theban sky god's greatest ascendancy occurred in the sixteenth century BC when the Egyptians expelled the Hyksos invaders and extended the imperial frontiers into Canaan. Rivalry with Re was eliminated by the association of Amun with Re as Amon-Re, except during the reign of Akhenaton. As a dynastic guardian, Amon-Re was ‘king of the gods’, incarnate in the ruling pharaoh, and out of the tribute of Asia great temples were built for his worship at Luxor and Karnak.

comes from the hebrew root word emunah or 'faith'. Thus it means that one believes that god will answer a prayer in the affirmative.
