I had gone to this local restraunt and ordered angel hair pasta in olive oil, garlic, and tomato- and fell in love with it. I know this sounds silly because the ingredients are olive oil, garilic, and tomato---i don't think there was anything else. My question is--how do i make it? Do i combine it all in a pan, do i boil the tomatoes first, do i just warm the oil and garlic add tomatoes later.....I really want it to be good so I will take any ideas! Please leave em' if ya got em'. Thanks : )

The dish you're describing is called Pasta Pomodoro, and it's one of my favorites - classic, simple, and really delicious. It's best with fresh, ripe tomatoes, but you can use canned if it's all you have. I have used both and I still love it, either way!

3 cloves garlic, minced
2 cans (14.5 ounces each) good quality diced tomatoes, or about 2 pounds fresh peeled and diced tomatoes
1/4 teaspoon freshly ground black pepper
2 cups fresh chopped basil leaves
1/3 cup extra virgin olive oil
1/2 cup grated Parmesan cheese
12 ounces dry angel hair pasta, cooked

Heat olive oil and add garlic; cook until garlic is tender. Add tomatoes and pepper and heat through, stirring constantly, about 2 to 3 minutes. Remove from heat. Transfer hot, cooked pasta to large bowl.

Toss pasta gently with tomato mixture, the fresh chopped basil, and half of the Parmesan cheese. Serve immediately and pass remaining Parmesan.

You need to figure out if the recipe uses fresh, canned or sundried tomatos before you get started. It sounds simple enough to play around with. Here are some thoughts:

1. For each serving of pasta, use 3 T olive oil and 1 clove garlic, minced.
2. Heat olive oil up until bubbles form and pan is hot. Add minced garlic and saute until translucent. I personally would add some chopped onion to the mix to add to the flavor, but its opt.
3. Add 1 chopped and seeded fresh tomato, or 1 cup diced tomatos, drained, or 1/2 cup sundried tomatoes in oil. Stir.
4. To this mixture I would add 1/4 cup chopped fresh basil or 1 T dried Italian herbs.
5. Stir until heated thru and toss with linguini. Add shaved parmesan, salt, and fresh ground pepper and serve.

i'd say to warm up the olive oil in the pan and add the garlic. Garlic cooks fast, so take it off of the heat as soon as it starts to brown. then add the tomato, stir it up and put it over the pasta. My bet, though is that if you let the oil cool, and let it sit overnight, the flavors would get all combined. then heat it up again the next day and pour it over the pasta.

Get a fry pan out

put a good amount of olive oil in it

chop up lots of garlic and (i love onions)
fly up

when onions are pretty done add cut up raw tomatoes (this will stop fry process due to the wetness, but heat the tomatoes.

Add to the (I hope ready to go pasta)

You can do it very lightly cooked, which is best in summer when you have vine fresh fruits available. Lightly sautee the garlic and add diced tomatoes and warm through. Toss with warm pasta and garnish with basil and grated parmesan.

You could also add one or more fresh garden veggies - almost anything you can drag out of the garden will taste good this way... try aspargus tips, green beans, sweet peas, slivered carrots, peppers (hot or sweet) corn, squashes, eggplant, fennel, spinach, arugula, herbs of all kinds, ...

I'm making myself hungry...

To make this into a side-sticking savory winter dish, use sliced dried tomatoes (either oil packed or rehydrated in warm water or broth), sliced dried olives, and feta cheese. Sautee garlic, add tomatoes and olives, heat through. Toss over pasta with the feta cheese.

Now, I am hungry.
