CROCK POT CHICKEN CACCIATORE

3-4 lbs boneless/skinless thighs and breasts
1 large onion, thinly sliced
2 large red or green bell peppers, sliced
3 cloves garlic, crushed
1/2 teaspoon each basil and oregano
1 (6oz) can tomato paste
fresh mushrooms, sliced
2 bay leaves
1 8 oz can stewed tomatoes with chiles
salt and pepper to taste
2 cups burgundy wine
Parmesan cheese, for sprinkling before serving

Place sliced onions on bottom of crock pot. Add chicken.
Stir together remaining ingredients and pour over chicken.

Cook on low 7-9 hours or high 3-4 hours. Serve over pasta, with a salad on the side.

1 c. Italian olive oil
8 cloves garlic, peeled and thinly sliced
1 c. water
1 1/2 tsp. finely chopped, fresh parsley
1/2 tsp. oregano
1/2 tsp. freshly grated pepper, black
1 tsp. salt
2 tablespoons of freshly grated parmesan.

In a saucepan, saute the garlic in oil over medium heat, until garlic is golden brown. Add water and simmer for 5 minutes, stirring occasionally. Add parsley and seasonings; simmer uncovered another 10 minutes. Combine thoroughly with pasta before serving. Sprinkle with parmesan.

Chicken Parmesean-
1 lb chicken (cut into strips)
1/2 C bread crumbs
1 tsp italian seasoning
1 tsp garlic salt
1 tsp oregano
1 egg
1/4 C milk
mozzarella cheese
1 can tomato sauce (or other red italian sauce you like)

Cut the chicken into strips. Mix the egg and milk. Mix the bread crumbs and spices. Dip the chicken into the egg/milk mixture. allow it to drip off. Put chicken into bread crumbs.

Grease pan and saute chicken until golden (about 8-10 min). Add sauce to pan and allow it to heat up as well. Sprinkle cheese over chicken. Serve over pasta.

Chicken Alfredo
2 C heavy cream
1/2 Tsp lemon juice
1 Tsp minced garlic
2 Tbsp butter (use butter not margariane)
grated parmesean cheese
1 lb chicken

Over medium heat melt butter. Stir in lemon juice and garlic. Be careful not to burn the garlic! Pour in cream and bring to a boil. Once the cream is boiling, slowly *** parmesean cheese, stirring constantly. Add cheese until desired thickness. Saute chicken for 8-10 min flipping occasionally. Serve over pasta.

*The sauce will appear a little thin, but will thicken as it cools
