any kind of potato or rice, but asparagus is a great veggie with Meatloaf. I did it last week. Use the fresh. So easy too. Cut the bottoms off. Then rinse and place in a microwave dish. Add some lemon juice, butter( I used I can't believe it's not Butter light) minced garlic( I used the jar kind) salt, pepper. Microwave covered for 2 minutes. Remove, stir around a bit cook another 2 minutes and BAM,,,,yummy. I added a bit more lemon juice after that. Tastes just like the fancy restaurants make.

for something a bit different than the regular mashed potatoes that everyone else listed, try macaroni and cheese. It's a total comfort food, and actually goes really well with the meat loaf. You can serve with veggie of your choice.

Mashed potatoes and tomato gravy. Green salad or peas or green beans. Any green vegetable.
Make tomato gravy by using the drippings from the meat loaf. Add tomato sauce and thicken as you would any gravy. I like the roux method but it's your choice. Don't forget salt and pepper.

wow! when I opened up the message thread here, I was going to type out garlic mashed potatoes also..
seems a hundred other folks agree.. looool
this is a traditional comfort food down south..
meatloaf, mashed potatoes w/gravy
and any other veggie added, like mixed frozen vegetables with a knob of butter,
steamed brocolli, a nice simple green salad.. hot baked dinner rolls to dip in the gravy... mmmm!

Scalloped potatoes baked in a casserole dish.
Acorn squash, halved and seeded, dollops of butter, S&P and 2 T. brown sugar for each half. Bake 1 hour at 400 degrees F. for a small squash, covered in aluminum foil. Scoop out cooked pulp and juice and mash with a fork.
Rice pilaf with green onions and shredded carrot for color and flavor.
Have a great meal and don't forget the candles and music!

Has to be mashed potatoes and green beans. Maybe sliced tomatoes with French dressing. Don't forget the brown gravy. Trailer trashy cooks unite!

You can't beat homemade mashed potatoes (use the golden potatoes for great color). A second choice would be scalloped potatoes.
