Roasted Garlic Bread
* 3 bulbs garlic
* 2 tablespoons olive oil
* 1 (1 pound) loaf Italian bread
* 1/2 cup butter
* 1 tablespoon chopped fresh parsley (optional)
* 2 tablespoons grated Parmesan cheese (optional)
1. Preheat the oven to 350 degrees F (175 degrees C). Slice the tops off of the garlic bulbs so that the tip of each clove is exposed. Place the bulbs on a baking sheet, and drizzle with olive oil. Bake for 30 minutes, or until garlic is soft.
2. Set the oven to broil. Slice the loaf of bread in half horizontally, and place cut side up on a baking sheet.
3. Squeeze the cloves of garlic from their skins into a medium bowl. Stir in the butter, parsley, and Parmesan cheese until well blended. Spread onto the cut sides of the bread.
4. Broil for about 5 minutes, until toasted.

How to Make Garlic Bread
1. Choose your bread. French bread (the long loaf/baguette) works best.
2. In a small bowl, mix crushed garlic with olive oil, and let it sit for a few minutes.
3. Use a brush to moisten the bread with the olive oil mixture.
4. Sprinkle on garlic powder. There should be about enough to lightly cover the entire surface, but not to the point where it falls off when you invert the bread.
5. Place the bread in a toaster oven or conventional oven on an ungreased cookie tray at 350ºF for about 10 minutes or until lightly browned.
6. Or: Try mixing the garlic with butter and mixed herbs to create a delicous spread that will go well on any type of bread.
Tips
* If garlic cloves are unavailable, you can use just the garlic powder.
* Try sprinkling on onion powder or chili powder for a new twist.
* Try adding Parmesan cheese to the garlic butter for extra flavour.
* Make a terrific bruschetta by spreading the olive oil and garlic mixture on bread, then topping the slices with chopped onion and tomato. Add a few shavings of Parmesan if desired.

You're going to get as many recipes as there are people on Yahoo. Here's what I do: Use whole "heads" of garlic; don't break them apart into individual cloves. Use HEAVY DUTY aluminum foil, or a double thickness of regular foil. Build a cocoon around the garlic (you'll have to use your judgment as to how much foil to use), so that the garlic may be completely wrapped. Drizzle with about 1 tablespoon of olive oil per head of garlic. Wrap the packet thoroughly, so that moisture will be trapped inside. Roast on a baking sheet at 400 degrees for about 45 minutes. Allow everything to cool, so you can handle it, then cut the garlic heads in half laterally (cut across, through the side; not from top to bottom). Then just squeeze the garlic goo out, and use it however you wish.

Slice country bread into 1 inch thick slices.
Drizzle or brush olive oil on both sides.
Cut a clove of garlic in half and lightly rub the cut side of garlic of both sides of the bread slices.
Sprinkle some dried parsely on each side
Put in the oven under the broiler to brown each side.
You can also spread some butter on both sides of the bread before broiling.

There is a restaurant in San Francisco called "The Stinking Rose" where everything includes garlic. They simmer garlic in butter and olive oil, and a number of herbs and spices. When it softens it spreads just like butter. They serve it with baguettes and it is Mahvelous.
