Well, I can make some pretty good sweet potatoes and what I do is get about 4 big sweet potatoes and peel the skin off of them. Cut them into kinda big chunks. Put them in a pot w/ about may 2 to 3 cups of water (don't put too much or they will cook too much and be too mushy) Add cinnamon and sugar (white or brown----I use a lot cause I like mine sweet. Let it cook on med. until the potatoes are tender. I like mine kinda mashed but with chunks w/ marshmallows on top.

Sweet Potato Casserole I
INGREDIENTS

* 3 large sweet potatoes
* 3 tablespoons butter, softened
* 1 cup packed brown sugar
* 1 cup chopped pecans
* 1 cup flaked coconut (optional)
* 1/3 cup all-purpose flour
* 1/2 cup white sugar
* 2 eggs
* 1/4 cup milk
* 1 tablespoon grated orange zest
* 3 tablespoons butter
* 1 teaspoon vanilla extract
* 1/2 teaspoon salt
DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Poke holes in the sweet potatoes with a fork, arrange the sweet potatoes on a cookie sheet. Grease an 11x7 inch glass baking dish.
2. Bake sweet potatoes for 1 hour. Let cool, then mash in a large bowl. There should be approximately 3 2/3 cups of mashed sweet potato.
3. Combine softened butter with brown sugar, nuts, coconut and flour; stir with a fork. Set aside.
4. Combine sugar, eggs, milk, orange peel, butter, vanilla, salt with the mashed sweet potatoes. Beat the mixture with an electric mixer until smooth. Pour mixture into prepared baking dish. Sprinkle the brown sugar-nut mixture over the top of the mixture.
5. Bake for 35 minutes.

Cut 3/4 of the way through the sweet potato and put some butter and brown sugar inside. Wrap them up in foil and pop them into a hot oven for at least an hour.

Cook potatoes in boiling water till kind of tender. Cool, peel and cut into slices. In a frying pan melt butter and add brown sugar. Stir until it thickens. Add the potatoes back and mix up gently so as not to mash up potatoes. Really tasty. No need for marshmallows or pecans.

Butter Pecan Sweet Potatoes

8 med. sweet potatoes (5 lbs.)
2 Tbsp. olive oil
Kosher salt
2 Tbsp. cold butter, cut into small pieces
2 Tbsp. light brown sugar
1/3 cup pecans
1/8 tsp. cayenne pepper

Preheat oven to 400ºF. Peel potatoes. Halve lengthwise, slice crosswise into ½” thick slices. On a baking sheet, toss potatoes w/ olive oil and salt. Transfer half the potatoes to a 2nd baking sheet. Bake until tender about 25-35 min., tossing occasionally. Toss potatoes with butter, brown sugar, pecans, and cayenne pepper, dividing evenly between both baking sheets. Bake again until sugar is caramelized and hard, about 10 minutes. Gently toss and serve. Serves 8.

Peel and slice sweet potatoes. Cook til tender. Drain and add some butter and sprinkle over brown sugar and white sugar. Let it cook a bit to caramelize.Tasty.

Bake the potatoes, cut them open and remove all of the skin, and sprinkle a lot of brown sugar on them.
Also to make it even better, add pecans on the top.

put butter in pan cut potatoes put brown sugar and cinnimon and fry till soft.or u can bake them and put butter,brownsugar and cinnimon on them(cant tell you how much I dont measure any thing just guess and tatse)
