There are soooo many wonderful cheeses. I'd say "cheddar", but there's even a huge variety of cheddars. I don't even remember the names of some of the cheeses I've tried and loved, but staying the the cheddar category, I think I'd choose and Irish cheddar.
Marki: You need to expand your horizons. Kraft processed cheddar? Seriously, try some others.. from the specialty cheese counter, not where all the processed name brands are. You'd be surprised how many amazing cheddar cheeses there are that have so much more flavor. Yeah... I use to love that stuff too, but no more!

I love most all cheeses. But my favorite is feta. The one I use the most though is extra sharp Tillamook cheddar.

I just love cheese- any cheese. Just yesterday i saw Paula Deen make an appetizer with Brie- i'm sure the recipe is on the Food Network website if you are interested. It was Brie cheese, all melted and gooey and this cinnimon nut topping and apples to dip into it...... Looked soooo good.

I love all kinds of cheeses except for the kinds with molds growing in them like bleu cheese and Stilton as I am allergic to mold.

I like goat cheese, strong goat cheese, but not too strong....
I like melted gouda on crackers, too.
