Buttermilk Fried Chicken with Gravy

1 (2 1/2 to 3-pound) broiler-fryer chicken, cut up into serving pieces
1 cup buttermilk
1 cup all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon pepper
Peanut or vegetable oil for frying
Gravy:
3 tablespoons all-purpose flour
1 cup milk
1 1/2 to 2 cups water
1 teaspoon chicken base
Salt and pepper to taste
Place chicken in a large flat dish. Pour buttermilk over; cover and refrigerate 1 hour.
Combine flour, salt and pepper in a double-strength paper bag.
Drain chicken; toss pieces, one at a time, in flour mixture. Shake off excess; place on waxed paper for 15 minutes.
Heat 1/8 to 1/4-inch oil in a large heavy skillet; fry chicken over medium heat until browned on all sides. Cover, and simmer, turning occasionally, for 40 to 45 minutes, or until juices run clear.
Uncover and cook 5 minutes longer. Remove chicken and keep warm.
Drain all but 1/4 cup drippings; stir in flour and cook for 30 second, stirring constantly. Add milk, 1 1/2 cups water and chicken base; cook and stir until thickened and bubbly. Cook 1 minute. Add remaining water if needed. Season with salt and pepper to taste. Serve gravy with the chicken.

This is an easy and simple way of making southern fried chicken and country gravy.

Start with two big bowls.

In one bowl put a mix of flour (around 3-4 cups), salt, black pepper, garlic powder and paprika and be generous about it. You can add a little cayenne pepper or chili powder for a zing.

In the other bowl beat a couple of eggs and add a little milk (about half a cup).

Cut chicken breasts into strips, after trimming off all the fat etc.

Now dip the chicken in the egg/milk wash with one hand, drop into the dry mix and turn and coat with your other hand. Then put it back into the egg/milk wash and turn with the wet hand and put back in the dry mix and coat again. Shake off excess gently and place in shallow oil that is already heated to a high temperature.

Only takes a few minutes for it to cook through. Turn frequently, drain on some paper towel and there you go, delicious, simple southern fried chicken.

Go and get a Pioneer Country Gravy mix at Wal-mart (Pioneer is by far the best packet gravy mix) and follow the instructions on the back, easy peasy.

I LOVE buttermilk fried chicken...this is a great version with a bit of herbs and spices that's a big hit at my place! I hope it helps - have fun!

1 (3 pound) fryer, cut into pieces
2 cups buttermilk
6 cloves garlic, smashed
1 large onion, sliced
1 cup chopped mixed fresh herbs (parsley, tarragon, thyme)
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
2 cups flour
1/4 teaspoon garlic salt
1/4 teaspoon onion salt
1/2 teaspoon cayenne pepper
Salt and pepper
3 cups solid vegetable shortening

Soak chicken in buttermilk with garlic, onions, herbs, paprika, and cayenne pepper. Refrigerate overnight or at least 8 hours. Drain in colander, leaving some herbs on chicken. In a large paper grocery bag, mix flour with seasonings. Meanwhile, heat 3 cups shortening in cast iron pan until 350 degrees. Place chicken pieces in bag with flour and shake, let sit 1 minute, then shake again. Add chicken to hot pan and fry on 1 side for 20 minutes, then turn to finish.

Gravy:
Onion Cream Gravy:
2 tablespoons all-purpose flour
1 cup finely chopped onion
1/2 cup finely sliced green onions
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 1/2 cups milk

To make the gravy, carefully pour out most of the hot oil from the skillet, leaving the crumbly bits on the bottom. Add the flour to the skillet and cook it, stirring, with the crumbly bits and oil
for 3 to 4 minutes. Add the onion, 1/4 cup green onions, salt, pepper and saute until vegetables are tender, about 4 to 5 minutes. Whisk in the milk little by little, until thoroughly combined. Cook until the sauce is smooth and thickened, about 5 to 10 minutes.

add some gingergarlic paste, some chilipowder, salt and some curd to the chicken. marinade for abt hald an hour and fry.

for gravy,,, chop 2 onions
fry onions till it is light brown... add 2 tbsp ginger garlic paste... fry a bit add curd... and one chopped tomato...salt...littlr water.. add any seasonings you may have in the kitchen... keep adding small amounts of water till u get the consistenecy u want ... keep stirring... the gravy will be done whenthe oil floats on the gravy ...

you can add butter if you want etra richness ... or milk... tastes good

cut up a fresh chicken. wash and season to your taste. i like to use Lawry's season salt, crack pepper and accent. put flour in a bag and coat chicken. use a large skillet and put about 2 cups of veg oil in. get oil hot place coated chicken in to fry about 10 mins on each side. do not cook completely!!!take chicken out and sit to side. In another skillet make your gravy. ( take 3/4 cup flour and 1 1/2 cup water wire whisk it in a lg cup or bowl. put it in skillet and whisk it until it gets a little thick. And chick broth or bouillon and a little gravy master for color) pre heat oven to 350 degrees, put chicken in a glass or aluminum pan lined up. pour gravy over chicken and put in oven for about 45 min to an hour. it should come out very moist and is very good whipped potatoes and a vegetable.

I use a vegetable oil to fry in.
Dip the pieces in beaten eggs, then flour. I season my flour with garlic powder, salt, pepper and a season salt.
I save some of the grease and meat drippings and add some flour to it to make a paste, then add milk and seasonings. Turn up the heat and stir til it gets thick.
