I don't know of any exotic foods to make with lemons. But you can squeeze the lemons and pour in ice cube trays and freeze them. Use them on vegetables and in sauces and dressings.

I love lemons - I would go crazy with a lemon farm! lol! This pasta dish always sounds weird to people, but then they have it and love it! It's good as a main dish, or as a side to chicken, fish, or beef.
Lemon Spaghetti
1 pound spaghetti
2/3 cup olive oil
2/3 cup grated Parmesan
1/2 cup fresh lemon juice (about 3 lemons)
Salt and freshly ground black pepper
1 tablespoon lemon zest
1/3 cup chopped fresh basil leaves
Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Meanwhile, whisk the oil, Parmesan, and lemon juice in a large bowl to blend.
Drain the pasta, reserving 1 cup of the cooking liquid. Toss the pasta with the lemon sauce, and the reserved cooking liquid, adding 1/4 cup at a time as needed to moisten. Season with salt and pepper. Garnish with lemon zest and chopped basil.
I also always add slices of lemon to a clear pitcher of water when I entertain, so if you're having people over for the holidays, that's a nice idea. You can also use thin slices of lemon as garnishment to a shrimp cocktail plate or crudite' platter.
For dessert, I'm a lemon bar lover....
For the crust:
1/2 pound unsalted butter, at room temperature
1/2 cup granulated sugar
2 cups flour
1/8 teaspoon kosher salt
For the filling:
6 extra-large eggs at room temperature
3 cups granulated sugar
2 tablespoons grated lemon zest (4 to 6 lemons)
1 cup freshly squeezed lemon juice
1 cup flour
Confectioners' sugar, for dusting
Preheat the oven to 350 degrees F.
For the crust, cream the butter and sugar until light in the bowl of an electric mixer fitted with the paddle attachment. Combine the flour and salt and, with the mixer on low, add to the butter until just mixed. Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9 by 13 by 2-inch baking sheet, building up a 1/2-inch edge on all sides. Chill.
Bake the crust for 15 to 20 minutes, until very lightly browned. Let cool on a wire rack. Leave the oven on.
For the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30 to 35 minutes, until the filling is set. Let cool to room temperature.
Cut into triangles and dust with confectioners' sugar.

There's lots you can do with the lemons including juice some of them and freeze it to use later for lemonade, etc.
Lemon meringue pie is always good. If you don't want to make the pie, you can just make a good lemon custard or pudding.
Lemon cookies, lemon bars, lemon chicken, lemon cake (or lemon poppyseed cake), and lemon sherbet also come to mind.
How lucky you are to have all those fresh lemons from your aunt!

You can make a fresh lemon sherbet--with some icing sugar to take the tart away. Breaded veal and lemon with rosemary for a main dish--for that matter fresh lemonade Lemon and mint go well together for a refreshing cocktail with soda water, ice and a slice of lemon.

Stuffed Grape Leaves. It's Greek food and delicious. Very exotic. The ingredients are grape leaves, hamburger (know it does'nt sound exotic, but when you're through it tastes great) lots of fresh squeezed lemon juice, lots of fresh garlic, salt and other great spices. I go to recipezaar.com to get my recipes. If you don't like my answer just go to that site and type in "lemons" and you'll get tons of answers. Hope this helps. I also love lemon chicken, but that is not very exotic.
