I've heard that they had a trick where they did something to cobras so that if they held them a certain way they would become immobile and rigid and that once they let them go it would appear as if their cobra "staffs" had come alive.

Satan can do "miracles" as well, many in the last days will be deceived by these miracles. But, what is, as Paul Harvey used to say, the rest of the story?

Exo 7:9 When Pharaoh speaks to you, saying, Give a miracle for yourselves, you shall say to Aaron, Take your staff and throw it before Pharaoh; and let it become a snake.
Exo 7:10 And Moses and Aaron came to Pharaoh, and they did so, as Jehovah had commanded. And Aaron threw his staff before Pharaoh and before his servants. And it became a snake.
Exo 7:11 And Pharaoh also called wise men and the sorcerers. And they, the priests of Egypt, also performed by their secret arts.
Exo 7:12 And they each one threw down his staff, and they became snakes. But Aaron's staff swallowed their staffs.

And, if these men were so powerful, and the gods of Egypt powerful as well, why couldn't they stop the plagues?

One of two ways, either illusion (such as what magicians do) or through demonic powers. Satan always tries to counterfeit what God does, the crux of the story is that Moses' serpent swallowed theirs, demonstrating who was the most powerful.

I don't worry about those ways because God caught up with in "Exodus" time. They have no power. No need to put myself into anything when it has no power, especially with God.
