There are two answers:

1.) Before he dies he says: "It is finished"

2.) The gospel of John does not state what Jesus's last words were before he ascended into heaven. The first chapter of acts is what covers it.

Well - he never says it was the last words spoken by Jesus - it's just the last thing he records Jesus saying:

Jesus said to him, "If I want him to remain until I come, what is that to you? You follow Me!"

(John 21:22)

Jesus' last recorded words in the Gospel of John are:

John 21:22 - "Jesus sayeth unto him (Peter), if I will that he (John) tarry till I come, what is that to thee? Follow thou me."

That said, the last recorded words of Jesus in the Bible are found in Revelation, chapter 22.

This is after he returned from the dead
