Peanut Buttercup cookies- holiday favorite~
INGREDIENTS
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, beaten
1 teaspoon vanilla extract
2 tablespoons milk
40 miniature chocolate covered peanut butter cups, unwrapped
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Sift together the flour, salt and baking soda; set aside.
Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well.
Shape into 40 balls and place each into an ungreased mini muffin pan.
Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

this is the EASIEST recipe and people go crazy over it!!! Take a tube of refrigerator cookie dough. Cut in 1/4 " slices. Lay 12 slices onto an ungreased cookie sheet. on top on the slices place one keebler grasshopper cookie. Top each cookie with another slice of sugar cookie dough and bake according to instructions on the package of cookie dough. These are awesome! My boyfriend ate a dozen in one night. you can also replace them with other keebler cookies or similar, i have also used the caramel ones and they were a huge hit. The best thing is, people think they are homemade and they took you no time at all. Happy Holidays!

i made a cool desert for thanksgiving that would be great for Christmas.
2 packages of cherry jello
1 can of whole cranberry sauce
make the jello as usual only heat the hot water on the stove and then add the jello. once that has dissolved add the cold water per the directions. put it in the fridge for about an hour.
cut up 1 granny smith apple
1/2 can of crushed pineapple in it's own juice
after about an hour add the pineapple and apple.
put the jello back in the fridge until set. this is great for christmas because you can make it red and green. I served mine in desert dishes with whipped cream. it was a big hit.

GINGERBREAD PEOPLE
3 cups all-purpose flour
¾ tsp. baking soda
½ tsp. ground cinnamon
1/8 tsp. ground cloves
½ cup butter
½ cup granulated sugar
1 large egg
½ cup molasses
1 tsp. vanilla
¼ cup grated fresh ginger
Royal Icing
Assorted colors of paste food coloring
In medium bowl, stir together flour, soda, cinnamon & cloves. In large owl, beat butter w/electric mixer. Add sugar; beat until fluffy. Add eggs, molasses & vanilla; beat until combined. Beat in ginger & as much of the flour mixture as you can w/mixer. Stir in remaining flour w/wooden spoon, or until easy to handle. Cover & chill dough about 3 hours, or until easy to handle. Preheat oven to 375 degrees F. On lightly-floured surface, roll dough to about 1/8” thick. Cut dough using 5” gingerbread people cookie cutters. Place cutouts about 1” apart on lightly-greased cookie sheet. Bake for 5 to 6 minutes , or until edges are firm & bottoms are light brown. Transfer cookies to wire rack & cool completely. Pipe designs on cookies w/tinted Royal Icing. To store, place in layers, separated by waxed paper, in airtight container. Store piped cookies for up to 3 days at room temperature. Freeze unfrosted cookies for up to 3 months.. Thaw, and if desired, pipe w/icing.
Yield: About 25 Gingerbread People
ROYAL ICING
2 cups sifted powdered sugar
4 tsp. meringue powder
¼ tsp. cream of tartar
¼ cup warm water
1 to 2 tablespoons additional warm water
Paste food coloring
In small bowl, combine sugar, meringue powder & cream of tartar. Stir in warm water. Beat on low speed until combined, then on high speed for 7 to 10 minutes until very stiff. Add 1 to 2 tablespoons additional warm water, 1 teaspoon at a time, until of glazing consistency. To tint, divide the glaze into small portions. Add enough paste food coloring to each portion to make desired color. Pipe onto cookies.
