I am going out of town for a couple of weeks and am trying to figure out what to throw away or freeze. Can you freeze fresh carrots?

cheeses
lunchmeat
meat (raw or cooked)

Keep in fridge: pickles, mayo, mustard, ketchup, relishes

Pitch or give to a neighbor: fresh fruits and veggies of all sorts, sour cream, cottage cheese, yogurt, milk, leftovers

I have not had a lot of success freezing fresh veggies but if you lightly steam them you can easily freeze them and finish the cooking when you return.
