Dinosaurs were there. Humans, the flood, an ice age, all killed them off.

At the time of the writing of the Bible, people simply knew nothing about where they came from. They did not know the history of the Earth, they did not know about life before themselves. The bible doesn't mention dinosaurs because the writers did not know they even existed. The Book of Job mentions large scaly creatures but does not specifically mention the word "Dinosaur".
The Book of Genesis' creation story is an attempt by the writer(s) to explain in layman's terms where we came from. How would the Big Bang Theory, evolution, and other scientific and celestial concepts be explained to people when those who wrote the Bible did not even know about it themselves?
It is only the last few hundred years or so (maybe a bit longer) that we as a species have had the technology and the means to discover things of our past that was previously unknown or rejected by Governments and religious leaders.

The two creation myths with adam and eve are parables, like a lot of things in the bible, to show a few things:
1) Humanity is God's highest creation. (The text of one of the narratives is done in a poetic crescendo, with man being at the top).
2) God's intention is for humans to have dominance over all other animals. (The text of the other story starts with man, and focuses on his dominance and naming of all animals.)
3) Original Sin, to be eventually redeemed by Christ.
4) The role of marriage. (The part about Eve being established as a complimentary-but-subservient partner to Adam).
...and other minor themes that people who study the Bible debate occasionally.
(Note that I'm atheist -- I don't believe any of this stuff, but it's one of the few interpretations that doesn't make someone look like a fool ignorant of most of science and biology, and is actually based on the history of the text.)

Dinosaurs lived before the flood. At the flood, the atmosphere lost much of its oxygen, and dinosaurs could not breathe. The only dinosaurs still living are the deep water ones, Loch ness monster, and Lake Champlain monster. (Maybe) See Kent Hovind

I don't think time has a beginning, although when this statement is viewed with clarity the scope of it is nerve-shatteringly huge.
Still, if time didn't have a beginning then i suppose...
oh my... *giggles*.
