The recipe says to leave it in the fridge for an hour before rolling out and cutting into shapes, however I'm not feeling to well so can I leave it in the fridge overnight and bake them tomorrow morning?

It will be fine. No problem with leaving it overnight. It will probably actually be easier to handle. Make sure you wrap it tightly or put it in a closed container. Hope you feel better tomorrow.

It's perfectly alright but it's preferable to wrap it in plastic wrap or parchment to prevent drying.

After leaving it overnight, give it a little bit of time to rest at room temperature to make it malleable, DON't KNEAD IT, unless you want really chewy gingerbread!

If it was me, I would cover the dough in plastic wrap or tin foil and put it in the fridge for an hour in the morning.

Its perfectly fine. Actually, like someone previously said, it makes it better. Helps it to set. But just remember to put it in cling wrap!!!

It'll do even better in the morning. Just make sure it's wrapped airtight.

Yes, you need to let it warm to room temp before using to avoid crumbly dough.

Can't see why not. People freeze cookie dough.
