Im cooking a chicken breast that has a coconut flake breading on it. Any idea for a sauce to put over it to complement it? It just seems like it may be too boring without one!

Hi,
1/4 cup crunchy peanut butter
1/2 cup coconut milk
1 Tablespoon fresh lime juice
1 1/2 Tablespoon soy sauce
1/2 Tablespoon dark brown sugar
1/2 teaspoon ground ginger (optional)
2 Tablespoons chopped green onions (optional)
1 Tablespoon chopped fresh cilantro (optional)
Mix the first 6 ingredients in a small sauce pan and bring to a simmer (but do not boil). Cook for 2-3 minutes.
Remove from heat and stir in cilantro and green onions. Mix.
Serve the sauce aside

A pina colada Sauce goes real well with coconut chicken.
1c Coco lopez
1 small can of crushed pineapple
1/4 c whipping cream

Heat for several minutes till a soft boil, let boil for about 5 mins on medium heat then serve on the side.

Try adding a bit of chicken boullion to some coconut milkSpice it with a whisper of garlic, some flaked red pepper and just a wee bit of sweetened condensed milk for a bit of sweetness. It would be a bit like the dipping sauce for coconut shrimp
