There is no reason why you can't. I have a friend who rejects the OT. The canonical NT is rather thin,particularly since he threw out the Pauline stuff too. But then he discovered all the early Christian scriptures that were excluded - Clement,Barnabas,etc. - and found that he had no trouble creating a perfectly bona-fide all-christian text of substantial length and quality. The Epistles of Barnabas almost made it in; Revelations almost didn't. It's not exactly arbitrary but there is just as much validity for you to do it as anyone else. Just use their basis for credibility: pray for guidance and make your selection; assume the guidance was provided. That's all these various councils did.

The hard part is actually getting them out. You use scissors? Razor blade? Then once they're out the binding doesn't hold up as well, and the whole thing starts falling apart. Just do what most people do and ignore the parts you don't like. :-)
