Elk can be very messy, so I would not serve them at the table. Find a nice meadow and serve them there. And don't let them use silverware. Their hooves do not have thumbs, so grasping forks is quite difficult. Also, elk are really cheap tippers.

Elk can have a "wild" taste of sage. I would recommed looking for a bovine (those animals that go "moooo") recipe that uses sage, but leave out the sage, because it's built into the taste of the meat already. Otherwise, just handle it the same way as you would handle bovine meat. I would recommend just onions and pepper in the mix for a minimalistic approach.

Another helpful hint is the size of the elk. Large older elk have tough meat. You might want to soften the meat up using a crock pot or turn the meat into hamburger.

It is pretty nasty. Best to put it in a stew or chili to cut down on the raunchy flavor.
