Making great deviled eggs is simple.First,boil about 6 eggs. When the eggs cool,cut the eggs in half,long ways,and scoop out the yellow inside.Put the yellow hard boiled inside in a large bowl. Add mayo,relish,a pinch of salt, pepper,and a little yellow mustard. Make sure you don't add too much mayo because the paste you make is not supposed to be soupy. Taste the paste as you go.Mix well. Take a spoon and scoop out a little at a time to start refilling your eggs. When you are finished,sprinkle paprika over the top. Delicious!!

Best recipe ever for deviled eggs!

6 large eggs
2-3 Tbsp. mayonnaise (Add 2 first, then more if needed. You don't want the filling TOO soft.)
1/2 tsp. spicy brown mustard
3 tablespoons SWEET pickle relish (Always use SWEET relish - the other kind is horribly bitter and ruins the eggs)
1/8 tsp. each of salt and pepper
A drop of hot sauce, if you have any.
Paprika to garnish tops.


Place eggs in a medium saucepan, cover with water to 1" above the eggs and bring to a boil over high heat.
As soon as it comes to a boil, remove pan from heat, cover and let stand 17 minutes.

Meanwhile, fill medium bowl with 1 cup water and 1 dozen ice cubes.

Pour off the water from the eggs and gently shake pan back and force to crack egg shells a bit. Put eggs in the ice water and let cool 5 minutes.

Peel eggs and slice in half lengthwise. Remove yolks to a bowl and mash them well with a fork. Add remaining ingredients. Mix well.

Arrange egg whites halves on a plate and fill with yolk mixture. Sprinkle paprika over them lightly. Chill for several hours (covered.)

Yield: 1 dozen.

NOTE: It's kind of a good idea to drain the excess liquid out of the relish in a sieve first (press the liquid out with a spoon.) because too much liquid makes the egg filling too soft.

Green Deviled Eggs

1 ripe avocado per 3 or 4 egg yolks
1 teaspoon mustard
1 T mayonnaise
1 teaspoon lime juice
salt to taste

Mash all ingredients together until smooth. Put avocado egg mixture in pastry tube with large star tip. Pipe into egg white halves. Sprinkle lightly with paprika.

Depending on the amount of eggs, use Underwood Deviled Ham to the mixture.I put the mixture in a pastry bag and use a Icing tip.It tasts and looks great.

Deviled Eggs
12 halves
Prep: 20 minutes
Cook: 15 minutes

Ingredients
7 large hard-cooked eggs
1/3 cup mayonnaise or salad dressing
1 to 2 teaspoons Dijon-style mustard, balsamic herb mustard, honey mustard, or other favorite mustard
1/2 teaspoon dry mustard
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon white pepper
Several leaves flat-leaf parsley for garnish or paprika (optional)

Directions
1. Cut six of the eggs in half lengthwise; gently remove yolks, set whites aside. Coarsely chop the remaining egg.

2. Place the yolks, chopped egg, mayonnaise, and mustards, lemon juice, salt and pepper in a self-sealing plastic bag. Seal bag. Gently squeeze the bag to combine ingredients. Season with salt and pepper.

3. Snip one corner of the bag and squeeze bag, pushing egg yolk mixture through hole into egg white halves. Top with fresh herbs or paprika. Makes 12 halves.

the way we make them,is hard boil the eggs, when cooked remove from heat. drain , while still hot slightly crack the shells. let set in pan with cold water and ice cubes until thoroughly cooled. by cracking the eggs slightly before cooling them they draw a small amount of water in through the cracks as they cool making them easier to peel, once cooled. cut in half separating the yokes from the whites. i then use miracle whip, home made zucchini relish, mixed with the yokes, to taste, then i like to sprinkle with dried sweet pepper flakes on top. have also used sweet red pepper relish instead of zucchini relish.with paprika sprinkled on top. some times add a Little mustard to the mix, want a little more kick, use a Little Cheyenne pepper. its kind of up to individual tastes

add vinegar to the water when you boil the eggs. Let them get really hard and then rinse immediately in cold water until they cool. Put into fidge. after an hour peel and cut them in half. remove the yellow into a bowk. Use real mayo and mash very fine. stuff the eggs. Sprinkle with paparika lightly. Adding anything else ruins them for me.

My trick is to add bacon bits to the deviled eggs. I just use a mayo/miracle whip mixture with some season salt. after all mixed together I add the bacon bits...

My family requests my deviled eggs at every gathering....My secret is to add a little spicy mustard to the yolk/mayo mixture. Gives it a great flavor.

Just mash up the yolks and add mustard and mayo to my taste and voila! I always get compliments on how good they are

I usually use about 1 teaspoon mustard and mayo until coated and really good!
