Here is a good baked potato casserole recipe, that may help you out. Hope this helps.
INGREDIENTS
5 pounds red potatoes, cooked and cubed
1 pound sliced bacon, cooked and crumbled
4 cups cubed Cheddar cheese
4 cups shredded sharp Cheddar cheese
1 large onion, finely chopped
1 cup mayonnaise*
1 cup sour cream
1 tablespoon minced chives
1 teaspoon salt
1/2 teaspoon pepper
DIRECTIONS
In a large bowl, combine potatoes and bacon. In another bowl, combine the remaining ingredients; add to potato mixture ad toss gently to coat. Transfer to a greased 4-1/2-qt. baking dish. Bake, uncovered, at 325 degrees F for 50-60 minutes or until bubbly and lightly browned.

2. Cooking Directions
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Place turkey in an even layer on the bottom of a 9x13 inch baking dish. Top with a layer of onion and a layer of green beans so that the turkey is no longer visible. Pour the condensed soup over the onion layer, then sprinkle with shredded cheese. Stir together the cubed cheese and mashed potatoes; spoon over the top of the casserole, and spread to cover.
3. Bake for 30 to 40 minutes in the preheated oven, until heated through.
Yield: 6 servings

Loaded Mashed Potato Casserole
5½ cups mashed potatoes (about 4 pounds uncooked)
½ cup milk
8 oz regular or low-fat cream cheese
1 cup regular or low-fat sour cream
2 tsp Prsley Flakes
1 tsp Garlic Salt
1/4 tsp McCormick® Ground Nutmeg
3/4 cup shredded Cheddar cheese
½cup crispy cooked and crumbled bacon (about 12 slices)
1. Place all ingredients, except cheese and bacon, in a large bowl. Beat with an electric mixer on medium-high speed until potatoes are fairly smooth and creamy.
2. Spoon mixture into a lightly greased 13x9-inch baking dish. Sprinkle with cheese and bacon. If you prefer extra crispy bacon, reserve bacon and sprinkle at the end of cooking.
3. Cover and bake in a 350°F oven 30 minutes or until heated through.
Tip: For faster preparation, start with instant or refrigerated prepared mashed potatoes.

BAKED POTATO CASSEROLE
4-6 med potatoes (wedges)
2 tbsp butter
1 tsp minced garlic
2-3 green onions (chopped)
1/2 cup black olives (chopped)
1/2 cup bacon bits
1 tsp chives
1 cup cheese of your choice (shredded)
1 con of sour cream
Boil potatoes until done. Saute butter and garlic in large skillet; add potatoes and toss to coat.Put potatoes in baking dish; layer all ingredients except for the sour cream. Put in 350 degree oven until cheese is melted. Serve with sour cream on the side.

Go to the Food Network and click on the Emeril page. Do a search for "Twice Baked Potato Casserole". I saw it on "Emeril Live" and my mom made it for Thanksgiving. Very tasty!
