The deer find hidden places like under a bush or in a draw and places that are off the beaten track. They lie down in those places so there is very little of their bodies to be seen then they come out in the evening to feed.

Deer rarely "Bed Down" during the day in fact they move as much and often more mid day as any other time,but being creatures of habit they stick close to their bedding areas,venturing out to feed and water in the early morning and late day ,they do this because their ability to see is better as they can distinguish shadows better at these times,and this adds to their ability to avoid predators also as shadows grow darker a predators eye sight gets worse also working to the deers advantage that is why you see them more early and late day because they venture farther and move more readily at those times.

They are not moving if it's hot and if it's a bit cold they will be out at night. I live in Nebraska. At night you'll see doe and bucks jump the road when it's cold but not when's it's hot. You'll see them in packs huddled together because there cold.
