Koi are a kind of Carp, like Goldfish. Freshwater fish are rarely eaten raw, but Carp is used for sushi in Japan. Almost always cooked though. Freshwater fish can carry Liver Fluke. A parasite.
Mahi Mahi is used in sushi, raw and cooked. I have had it as sashimi too..

Generally only saltwater fish are used in Sushi... so that explains the Koi (even though I don't know that this one requires explanation).
I've had Mahi-Mahi Medium Rare before and it tasted wonderful... not really sure why it isn't sushi worthy other that the fact that there are cut standards that may not be met with this fish. I actually thought that I had seen it as sushi once before!?

Koi means Carp folks! There's no distinction in Japan between the name Koi fish (ornamental fish) and common carps. As for carp as sushi. It exists. Look up "Koi-Arai". Most koi fish in Japan are either eaten as sashimi. Although simmered carp are also very traditional in Washoku cooking.

Koi are considerd PETS or at least PRIZES..
under extream circumstances they are carp (lots of bones) soup maybe...
as for Mahi Mahi I believe they are on the Shasumi list (sp?) BUT the texture may not be suitable...

Koi? Do you even tasted koi's meat? Koi is for pet. is the same like you asking why don't they make sushi from gold fish??
They do use Mahi2 as sushi, japan is a strong consumer of it.
