If you're desperate it will work, but a better solution is powdered milk or some other cream - its not just consistency, it's also flavor. Watered eggs does not make good french toast, AT ALL. (I know from personal experience.)
Do you have half and half for coffee? A better solution is to take half and half and mix it with water, then use that with the eggs for your batter.

No, not at all. Milk, when combined with eggs makes a custard like mixture and that's what makes french toast soft and tender on the inside and nice and crunchy on the outside. Water will make it taste like scrambled eggs. Trust me, I've tried it, and I'll never do it again.
Use cream or half-and-half, if you have any.

Personally I would just whisk up the eggs add some vanilla and cinnamon and dip away! Forget the milk or water for now. My Momma always said when you don't have something...Improvise! But I do hope you have lots of butter and Maple Syrup YUM!

No, one must use milk, and put in a dash of salt and a dash of vanilla flavoring. Milk is good for humans, don't substitute it for a lesser nutritional value food. cup of milk, a large egg, dash of salt, and a 1/2 teaspoon of vanilla. Wisk it up and soak the bread in it. try different wole grain breads, or raisin or special types of bread, like challah for the holiday.

i dont think water would work but you really dont have to have milk at all. whisk a few eggs with a little vanilla flavoring and cinnamon! will taste very good. thats how i make mine anyway.!!!
